Knife Sharpening Steels

I recommend that the surface where you cut be wood or plastic. Harder surfaces, such as marble, blunt knife edges very quickly. The best surface is a an end-grain, butcher-block surface.
Even the best knife will loose sharpness over time, and regular use of a sharpening (honing) steel is recommened. If used correctly, the steel will remove microscopic amounts of metal from the edge until the edge is sharp again. Use the following technique to ensure success:
- Hold steel in vertical position with steel facing up.
- Bring the blade into contact with top section of steel at the start of knife's cutting edge (choil) near the blade's butt.
- Put knife edge on steel at an angle of 15° to 20°.
- Move edge in a wide arc down the the steel in such a way that the knife tip ends close to the handle of the sharpening steel.
- Repeat same using other side of blade—it is important to alternate sides (otherwise a burr will be left along last side sharpened).
- A few times back and forth should suffice—use progressively less pressure from one sharpening movement to the next.
Sharpening steels vary in quality, and the sharpening ridges on low-quality steels will wear thin very quickly. I recommend a commercial-quality sharpening steel, because it will restore quickly your knife edge and last for many years to come.

Winterize Your Henri Studio Outdoor Fountain
Extreme and rapid changes in temperature and humidity affect all concrete adversely. Concrete has an inherent tendency to expand and contract with climatic conditions. However, your Henri cast stone products have been manufactured with weather in mind. The concrete mix contains fiber and mechanical additives that enhance the elastic qualities of the concrete. Occasionally, non-harmful surface cracks may appear - but your your Henri cast stone product will not crack due to weather if the following simple rules are followed:
- Do not allow waste to collect and freeze in fountain bowls or shells.
- Do not allow water to collect and freeze in planters, saucers, or birdbaths.
- Do not allow statuary or pedestals to sit in a pool of ice.
Cast stone products left exposed to icing conditions may shale or crack due to the mechanical force of water solidifying and expanding along the concrete surface.
Important: If your Henri fountain, birdbath, planter, or statuary cannot be stored indoors during the winter season, you must at least protect it from ice collection or exposure.
How To Protect During the Winter:
For fountains, first remove the stature and pump (storing them inside if possible). Next, fill the bowl(s) or shell(s) with an absorbent material such as burlap bags or blankets. Then, cover the entire fountain with a Henri fountain cover. Should condensation form inside the cover, they will be absorbed by the material.
For birdbaths, planters, or statuary, set the pieces on high ground where a pool of ice will not form, then cover with a Henri fountain cover.

Butcher Block Care

We sell a lot of John Boos butcher blocks and furniture with butcher block tops at 125West.com, and often we get customer questions about caring for their new butcher block. By following a few easy usage rules and maintenance steps, butcher block life is almost unlimited! Firstly, butcher blocks are made from real wood. Wood is a natural material that responds tochanges in temperature and humidity. These changes set up tremendous internal forces in the block. Their shape and dimensions will change with the seasons. If warping or edge cracking appears it is related to uneven changes in temperature or humidity. Keep your block dry, away from heat and allow it to dry evenly. Regular oiling helps to prevent these problems because it keeps water from entering the board. Sometimes this finish will give the impression that the block is wet, the topis ready to use. Wash your block by hand only using anti-bacterial dish soap and warm water. Do not submerge the block! Add a small amount of bleach or vinegar to the water for extra bacteria killing power after chopping bacteria carrying foods such as raw chicken. You can also rub the block with a half a lemon to kill bacteria. Our blocks are not dishwasher safe. Thoroughly dry the block after washing. When possible allow the block to dry standing up on edge to help the block dry properly and prevent warp. Periodically oil the block with mineral oil, Glumber Oil, or our Block Bros. All-Natural Block Oil. Letting the block dry out because of a lack of oil is the #1 cause of problems with the block. You can't oil your block too much! Oiling will help keep that beautiful sheen. Do not allow liquid to stand on the block for a long period of time, it will stain the block and cause the wood to expand, causing glue joint failure and warp. Use a steel scrapper or sandpaper as needed to keep the top smooth and free of deep cuts and food buildup, then re-oil the top. Work with different areas of the block to help it wear evenly. Both sides should be used if the design allows to extend the life of your board. Do not use a razor sharpened edge on your clever it will chip out the wood. Do not expose tops to excessive heat, cold or moisture! Never put in microwave or dishwasher. Never place on stove burners.

- Pour mixture into the machine's water tank
- Allow about 6oz of solution to flow through the steam arm
- Allow machine to sit about 15 minutes
- Again allow about 6oz of solution to flow through the steam arm
- Allow the machine to sit again for 15 minutes
- Allow the rest of the solution to flow through the steam arm
- When water tank is empty, rinse and fill with fresh water

The panini grill is one of our most popular Sodir appliances. Its heavy clamshell design allows simultaneous grilling (of sandwiches, steaks, fish) from two sides. Several panini grill sizes are available.
Sodir griddles offer a large cooking surface. Smooth cast iron plates, plancha plates (satin finished cold-rolled steel plate), and ceramic griddle tops are available. With fast and even heating and thermostatically controlled temperature up to 570°F, you can produce many servings of grilled foods in a short time.
Sodir also produces a large range of commercial convection ovens. Convection ovens force superheated air with a powerful rear-mounted fan throughout the oven for quicker, more even baking, browning, and cooking no matter how filled the racks are. Assembling a shelf to its post is easy: (1) Snap a 2-piece plastic sleeve together around each post at the groove where you want your bottom shelf. Be shure the smaller end of the sleeve (and the ridge inside the sleeve) is toward the top of the post. (2) Stand a shelf on its side and while working from the bottom side of the shelf, slide the four post up through the post holes until the plastic sleeves on the post are seated in the post holes. (3) Set the unit upright on the floor and press the bottom shelf down firmly over the sleeves at each corner. (4) Snap four more sets of sleeves onto the posts where you want the next shelf and then slide the shelf down over the tops of the sleeves. Seat the shelf firmly as in step 3. Repear for remain shelves. (5) If necessary, level the shelving structure by turning the adjust feet.
